This is my salad. I normally do not like cold food, but I made an exception today because I am trying to have more carbs. It is very good. With little tasty morsels in each bite and nice mix of textures and flavors.
1 romaine heart chopped small.
2 tsp. olive oil. Salt & Pepper.
1.75 oz. of salmon left over from last night.
1 roasted red pepper, chopped.
6 roasted asparagus spears from last night, chopped.
3/4 cup bulgar wheat.
6 green olives.
Nutrition info: 339 Calories, 17 grams of fat, 38 g. carb., 13 g. protein, 8 grams of fiber.
It's about 100 calories less than my lunches usually are, but I'm meeting a friend at Whole Foods for tea and cakes later, so I'll make it up then.
